Light Oatmeal Applesauce Muffins

I made these muffins last weekend and Hannah really likes them. I used cinnamon applesauce and regular flower instead because that's what I had on hand. They're about 60 calories per muffin that way. The only drawback is that they're low on fiber and protein (at least with regular flour). I think next time I'll buy some wheat germ or something to add to them to bulk them up.

Old fashion rolled oats (not instant) – 1/2 cup
Non-fat milk – 1/2 cup
Whole wheat flour – 1/2 cup
Brown sugar – 3 tbsp
Unsweetened applesauce – 1/2 cup
Egg, whole – 1
Baking powder – 1 tsp
Salt – 1/2 tsp
Cinnamon – 1 tsp
Raisins or nuts (optional)
1. Preheat the oven to 400 degrees.
2. Soak the oats in milk, heat up in the microwave for 45-60 seconds. Combine the oat mixture with the applesauce and an egg, and mix until combined.
3. In a separate bowl whisk the dry ingredients together. Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
4. Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy.
