Week 4 Results

Here are the Week 4 Results.  Apologies for the delay.  We were busy partying it up in San Antonio this weekend.  So the big winner for the week was Skyler.  Good job!

Week 3 Results

Hello everyone and welcome to Week 3.  We had a number of people not report their weights this week. Please, please, please. get these to me first thing Saturday morning.  Now there was some sliding this week (myself included).  A week in a conference center with wall to wall food is not conducive to a weight loss contest.  But we still have nine weeks to go so there is still plenty of time.  As my good friend Taylor says, "Shake it Off!"

Week 2 Results

Here are the results for week 2.  Let's get those weights in a little earlier.  You know who you are!  :)

There was a little sliding this week but we can pick it up again during week 3.  After the mother's day food and stuff of course.  So let's hit it hard again first thing tomorrow!

This first chart is the total weight loss through week 2.

The second chart is showing weight loss just for week 2.  Wendy is the winner for week 2!

Light Oatmeal Applesauce Muffins

I made these muffins last weekend and Hannah really likes them. I used cinnamon applesauce and regular flower instead because that's what I had on hand. They're about 60 calories per muffin that way. The only drawback is that they're low on fiber and protein (at least with regular flour). I think next time I'll buy some wheat germ or something to add to them to bulk them up.

Old fashion rolled oats (not instant) – 1/2 cup
Non-fat milk – 1/2 cup
Whole wheat flour – 1/2 cup
Brown sugar – 3 tbsp
Unsweetened applesauce – 1/2 cup
Egg, whole – 1
Baking powder – 1 tsp
Salt – 1/2 tsp
Cinnamon – 1 tsp
Raisins or nuts (optional)
1. Preheat the oven to 400 degrees.
2. Soak the oats in milk, heat up in the microwave for 45-60 seconds. Combine the oat mixture with the applesauce and an egg, and mix until combined.
3. In a separate bowl whisk the dry ingredients together. Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
4. Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy.

Hello everyone and welcome to Week 1!  Here are the anticipated results.  This week we are only showing the overall results.  Both graphs have the same information.  They are just showing it in two different ways.  Next week we will show overall graphs as well as the weekly graphs.

I did not have the weights for Amanda & Jacob so they are showing zero on the graphs.
